General Tso's Chicken: THM "S"

One of my favorite meals is General Tso's Chicken. Such a shocker, I know! I make a pretty mean homemade version that includes honey and ketchup, amongst other not so healthy ingredients. After having an intense craving for Chinese food, I decided to get creative and lighten things up a bit!


This dish is amped up on veggies, healthy sweetener and is kind to your waistline. I'm excited to bring this Chinese dish back into my life! Here's what you do:

Thaw four chicken breasts and chop into bite sized pieces. Create a drudge by combining 1/2 C. Baking Blend or almond flour, 1 t. mineral salt, 1/4 t. garlic powder and 1/4 t. baking powder. Toss the chicken in the drudge until it's lightly coated. Drizzle about 2 T. Olive oil in a heated skillet and add the chicken and 1 small chopped onion. Saute until the chicken is cooked through and golden brown. You may need to add more oil as the breading tends to soak it up!



Take the chicken off heat and set to the side. In a small saucepan combine 2 C. Chicken broth, 2 t. Super Sweet Blend, 2 pinches mineral salt, 1 t. minced garlic, 1/2 T. crushed red pepper (more if you like it hot!), a dash of soy sauce, and 2 T. tomato paste. Bring to a swift boil, then reduce to low. While the sauce simmers, add 1/4 t. Gluccie and whisk well. Let the sauce simmer until it thickens, about 5 minutes or so. 

Combine the sauce with the chicken mixture and stir well. Place over low heat. Add whatever veggies you have on hand! I added green beans, a few peas, broccoli and about 1 T. frozen corn. 


You can serve this over Not-Naughty Noodles, Troodles, or Dreamfields Pasta!
